Disaccharidase Recipes: Potato Kale Scramble

Gah. Finally another recipe. I’ve had these for months now. Why does life always do such a great job of getting in the way? You have to live. But working and eating and cooking and cleaning are definitely not the most entertaining or memorable parts of life.

The things that got in the way this time was moving and packing and trying to find everything while also trying to work and keep two kids alive. The answer to where things are is still “in a box” and it’s been a month in the new house. Gotta work on that.

But anyway. Recipe first talk later.

This was one of the first things I crafted for the disaccharidase diet. I was going straight off the list of approved foods my husband got from the dietician so it’s not the most creative of the bunch but it was probably one of my favorites. It was filling and satisfying but also didn’t feel like I was missing out on all the good stuff since it had so many different flavors melding together. Now that I’ve done this a little longer I add other things as well but this is the “base” that I start with.

The hardest part is the timing in this. Originally I started with browning the turkey but that did not take nearly as long as the potatoes. Now I chop the potatoes and then let them soak while I do other things. Then I get them going in the frying pan and start chopping veggies and get them ready. When the potatoes start browning I start the meat in the other pan. Then it’s usually ready to be combined by the time the meat is done and I can give the tomatoes a quick fry to make them extra tasty.

Also remember the smaller the potato chunks, the quicker they will cook. I made them fairly large the first time and it took a good hour minutes before they were done. WAY TOO LONG. The presoak helps with this as well. I didn’t think it mattered but it DEFINITELY does. Especially if you want to get the starch out.

If you have any pointers for me shoot them my way. My cooking skills are still very much in the amateur phase so I’d love some guidance.
